Varan is a simple Dhal reciepe with some seasoning.In India dhal is used in all states as a side dish for rice or with roti.In maharastra,without Varan and Thoop(ghee), bhath(white plain rice) is not served at any meals.For simple meal a varan bhath and bhaaji(curry)can be served.I made a varan with simla mirchi.I share this for Nupur's RCI.
- Toor dhal - 1 cup
- Mustardseeds
- Greenchilies - 3
- Curry leaves - 1 stick
- Corriander leaves
- Cumin seeds - 1/2 tsp
- Simla mirch(capsicum)- 1
- Tomato-1
- Turmeric powder 1/4
- Salt for taste
- Oil -2 tblsp
Cook the toor dhal and keep aside.
Cut the simla mirchi and tomatoes.
Heat oil in a kadai add mustard to splutter.
Then add cuminseeds,greenchillies,curry leaves,simlamirch and tomatoes one by one.
Saute for 2 minutes ,add the Smashed dhal to the mirchi mixture.
Stir it,add water if needed.
Simmer the stove for 5 mins and salt.
Finally garnish with corriander leaves.
Variation
You can even add Lasoon(garlic pods)it will give a nice aroma and different taste.
Have Varan bhath with Chutney pood or any Bhaaji or with Kothimbir vadi as accompaniments.
